Smoked salmon and avocado open sandwich

Ingredients

  • 1 100g Smoked Salmon (slices)
  • 2 Inch Cucumber
  • 1 Thin Wholemeal Thins
  • 1 Avocado
  • 2 Cherry Tomatoes
  • 1/2 Spring Onion
  • 1 Dash Balsamic Vinegar
  • 2 tsp Butter

Instructions

Meal Preparation

  1. Cut avocado in half. Remove the seed inside. Scoop out the avocado and slice into smaller pieces.
  2. Slice spring onion into small circles
  3. Cut cucumber in half, lengthways. Then half again.
  4. Slice cherry tomatoes in half

Cooking Instructions

  1. Toast the thins in toaster.
  2. Butter each slice, then cut into rectangular pieces.
  3. Place slices of salmon on toasted bread.
  4. Place cucumber and avocado on the toasted bread.
  5. Sprinkle spring onion over meal.
  6. Drizzle with balsamic vinegar.
