It is amazing what you can make in a slow cooker. There are so many recipes to choose from, but my personal favourite has to be a slow cooked Shepherds Pie. This healthy slow cooker meal will cook whilst you are out and about, so you don’t even have to be at home whilst the slow cooker is working its magic!

If your time is at a premium, why not prepare all the ingredients the night beforehand? You can then warm the slow cooker up whilst you eat your breakfast, and leave your slow cooker to cook up a tasty Winter warming dish whilst you are a work.

Slow Cooker Shepherd's Pie

Slow Cooker Shepherd's Pie

Use your slow cooker to create a healthy Shepherd's Pie filled with nutritious vegetables and lean minced beef. This dish is a real Winter warmer, for all the family to enjoy. This recipe will cook for 5 hours whilst you are out and about!

Cook Time 5 hours 10 minutes
Total Time 5 hours 50 minutes

Ingredients

  • 500 g Lean Beef Mince
  • 1 kg Potatoes , (Maris Piper)
  • 2 Onions (medium)
  • 2 Garlic Clove
  • 1 Yellow Courgettes (medium)
  • 1 Green Courgettes (small)
  • 1 Green Pepper
  • 1 Tin Green Lentils (235g), (In Water)
  • 90 g Cheddar Cheese
  • 1 tbsp Dijon Mustard
  • 6 tbsp Semi-Skimmed Milk

Herbs and Spices

  • 1 tsp Dried Mixed Herbs
  • 1 tsp Italian Seasoning
  • 1 tbsp Rainbow Peppercorn
  • 2 tsp Salt (Maldon Sea Flakes)

Other

  • 25 g Salted Butter
  • 1 tbsp Plain Flour
  • 2 tbsp Worcestershire Sauce
  • 2 tbsp Bovril
  • 1 tbsp Olive Oil
  • 2 tbsp Tomato Puree

Instructions

Meal Preparation

  1. Set slow cooker to 'low heat'
  2. Peel potatoes. Chop them into smaller chunks, then set aside.
  3. Peel, and finely chop onions.
  4. Peel off garlic clove skin, then crush in garlic crusher
  5. Chop green pepper in half, and remove the seeds. Slice pepper finely into small pieces.
  6. Slice courgettes (yellow and green) into small pieces.
  7. Drain green lentils in a sieve

Cooking Instructions - Saucepan

  1. Boil kettle of water
  2. Pour boiling water into a large saucepan. Add 1 tsp salt flakes. Cook over medium heat.
  3. Put chopped potatoes into saucepan of boiling water. Cook on medium heat for approximately 12-14 minutes (or until cooked through).
  4. Drain potatoes in a colander.
  5. Add Dijon mustard, semi-skimmed milk, butter, and 1/2 tsp Rainbow Peppercorn to potatoes.
  6. Mash potatoes together until smooth

Cooking Instructions - Frying Pan

  1. Heat 1 tbsp olive oil in frying pan
  2. Place onions in frying pan, then fry for 2-3 minutes.
  3. Add garlic and cook for a further 1 minute
  4. Add green pepper and cook for 3 minutes
  5. Add courgettes to frying pan. Cook for 2 minutes.
  6. Season the ingredients with Italian Seasoning, 1/2 tsp Rainbow Peppercorn and 1 tsp salt. Stir until mixed in well.
  7. Add beef mince to frying pan, stir well. Fry mince for 2 minutes, or until the mince is no longer pink.
  8. Add plain flour, mix well. Cook for a further 1 minute
  9. Add tomato puree, mix well.
  10. Add green lentils, worcestershire sauce, and bovril to the frying pan. Mix the pan ingredients together.
  11. Place Shepherd's Pie mixture into slow cooker.
  12. Spoon mashed potato over the top of the mince beef mixture.
  13. Cook Shepherd's Pie in slow cooker, over a low heat, for five hours.
  14. Turn grill on, to medium heat
  15. Turn slow cooker off. Carefully lift off slow cooker lid, making sure you do not burn yourself on the hot steam that escapes as the lid is lifted.
  16. Sprinkle grated cheese over the top of the cooked Shepherd's Pie
  17. Place slow cooker dish under the grill for 10 minutes, or until the cheese is bubbling and melted.
