This healthy creamy tarragon chicken recipe will blow your mind! The tender chicken bites, combined with our creamy tarragon sauce will make this dinner recipe one not to miss!

Tarragon Sauce

The tarragon sauce has been created from a combination of chicken stock, butter, cornflour, onions, tarragon, and 0% Fat Greek yoghurt.

This classic French dish usually contains double cream and white wine, so you maybe wondering where those expected ingredients are hiding. The answer is that I deliberately excluded them from this recipe, to make the dish healthier. Don’t worry though, the taste has not been impacted by removing these ingredients. The dish tastes incredibly divine, you’ve just got to try it!

To achieve the creamy taste, I used Greek Yoghurt, which is packed full of protein to help you feel fuller, for longer. It is also a great addition to your diet if you are trying to build muscle.

If you do not have any cornflour in your pantry, use normal plain flour. I added cornflour into this recipe, to make my creamy tarragon chicken recipe gluten free.

What To Serve With this Creamy Tarragon Chicken Recipe

Our tarragon chicken is covered with cheesy mustard mash, so you won’t need to add anymore potatoes in the dish. The tarragon sauce is also incredibly tasty, so you may or may not wish to include more vegetables. The decision is entirely up to you. I personally like including green vegetables as a side dish, because it adds colour to the meal, and gives me an extra boost of vitamins and nutrients.

My recipe works well with the following vegetable side dishes:

  • Steamed tenderstem broccoli
  • Asparagus
  • Carrot sticks
  • Green beans

Tarragon Sauce Without Cream

Absolutely! Yes yes yes!

Most people hear the word “creamy” and are convinced that the creamy taste and texture can only be achieved by adding, you guessed it … ‘cream’! I’m here to tell you that this isn’t the case anymore.

My tarragon sauce doesn’t use a drop of cream. Instead, I used 5 scoops of 0% Fat Greek Yoghurt (based upon a dish serving of 4/5 people). This is a great alternative, and far healthier too.

Creamy Tarragon Chicken Recipe

Our mouthwatering creamy tarragon chicken recipe will be a total hit with all the family. Enjoy succulent pieces of chicken with this must have easy dinner.

Ingredients

  • 4 Skinless Chicken Breasts
  • 2 tsp Maldon Sea Salt
  • 1 tsp Ground Black Pepper
  • 2 Large Onions
  • 500ml Chicken Stock
  • 2 tbsp Fresh Tarragon (or dried tarragon)
  • 5 tbsp 0% Greek Fat Yoghurt
  • 40g Corn Flour (or plain flour)
  • 60g Unsalted Butter
  • 2 tbsp Wholegrain Mustard
  • 100g Cheddar Cheese
  • 1kg Maris Piper Potatoes
  • 1 tbsp Dijon Mustard
  • Dash of Whole Milk

Instructions

Meal Preparation

  1. Boil kettle, make chicken stock
  2. Boil saucepan of water
  3. Peel Potatoes, cut into large chunks.
  4. Slice chicken into bite sized pieces
  5. Peel onion, then finely slice
  6. Finely chop fresh tarragon
  7. Grate cheese

Cooking Instructions

1. Melt 20g butter in a deep frying pan, over a medium heat.

2. Add chicken to the frying pan, and fry for 5-6 minutes. The chicken does not need to be cooked through at this time, just browned. Once complete, remove chicken from the heat and place in a separate bowl.

3. You will now have an empty frying pan.

4. Reduce the heat on your hob, and melt 40g butter in the frying pan.

5. When the butter starts to foam, add the onions and stir well. Cook for 10 minutes until softened. Stir often, to prevent burning the onions.

6. Add cornflour to frying pan, and mix well with onions until they are fully coated. Cook for 2 minutes.

7. Remove frying pan from heat. Pour small amounts of chicken stock into onion corn flour mixture, then whisk carefully.

8. Boil potatoes in water with 1 tsp salt.

9. Once all the stock has been added, return frying pan to the heat and bring mixture to the boil. Simmer sauce for 5 minutes.

10. Add black pepper, wholegrain mustard, 1 tsp salt, tarragon, and yoghurt to the frying pan. Mix well. Cook for a further 5 minutes. The tarragon sauce will gradually thicken.

11. Once cooked, drain potatoes. Add Dijon mustard, 50g cheese, milk. Mash potatoes until smooth and creamy.

12. Add chicken to tarragon sauce, and mix well.

13. Heat the grill up to high.

13. Place chicken tarragon sauce mixture in a casserole bowl, then add mashed potatoes on top. Sprinkle remaining 50g cheddar cheese on top of potatoes.

14. Place under the grill, for 10 minutes. The top should look golden brown.

15. Remove from the grill, and serve.

16. If you decided to cook vegetables as a side dish for this meal, serve cooked vegetables now.
